Apparently, you're not supposed to call it "baby weight" if it's been longer than a year after you've given birth -- tell THAT to my thighs and my three-year old daughter.

Kourtney Kardashian has managed to shed 30 of the 45 pounds she gained while pregnant with Penelope, and look more fabulous than ever, which makes us both proud of her and a liiiitle bit jealous. She and her babies are gorgeous enough as it is, and frankly we didn't mind seeing her with a few extra pounds. But Kourtney Kardashian wasn't having any of that -- she's back and more beautiful than ever.

How'd she lose those pesky baby pounds? What'd she snack on to get her rockin' bod back? The answer may surprise you. Or, at the very least, make you wonder how to pronounce it.

Kourt explains that while she was breastfeeding her son Mason, she totally craved sweets, so she snacked on a box of one of the most delicious types of cookies EVER -- Nilla Wafers. During her second pregnancy with baby Penelope, she decided to kick that nasty (delicious) cookie habit, so she wouldn't gain so much weight.

When Kourt was asked how she lost the baby weight, she claims, "When I'm here around the house, I just eat healthy."

So what's she's traded in her delicious cookies for? Another delicious yet far more nutritious treat: edamame. Steamed soybeans are one of nature's most delicious foods and one of my personal favs. They're extremely good for you, although half the people I know loathe eating them, which baffles me.

Apparently edamame was all it took for Kourt to lose those thirty pounds.

We have to say, we're thrilled it worked for her, but sorta jealous.

See, when I had my last baby, I did the same thing -- opted for edamame rather than the cookies or cupcakes I so desperately craved, shoving the soybeans down my gullet like it was my job or something.

I gained 20 pounds.

Now, I wasn't eating 20 pounds of edamame a day or anything, it's just that the edamame didn't have the same effect on me as it did Kourt Kardashian. At the very least, it tasted good, even if it did go directly onto my thighs.

Despite our jealousy, we're thrilled that Kourtney shed those 30 pounds and is looking hotter than ever.

Way to go, Kourtney!
